(ETA - all recipes from an ancient copy of Mary Berry's Fast Cakes.) One of the best baking books around, if not the best. Even I couldn't fail to make edible scones using her recipe. Even though my fruit ones have all the fruit at the bottom. 1. Probably should add, Mary Berry doesn't call them St Clements Cakes and she doesn't add candied peel to her recipe either but I'm an inveterate recipe fiddler. 2. Fruit falling to the bottom is usually because it's too sticky/wet. Rinse off and pat dry then dust in flour before mixing into the scone mix. Or, just enjoy the intensely fruity bottom. I think Mary prefers a fruity bottom to a soggy bottom any day!

Oh! I used to have a tea caddy like yours. It was in the cupboard at work and someone was about to throw it out so I had to rescue it. I was going to use it to keep pens in but then I can't close the lid so it may become a petty cash stash!
